Hydrating Electrolyte Watermelon LMNT Popsicles

I love to know I'm staying hydrated and I love having fun with my kids even more. 

Last week, we explored using LMNT in popsicle molds to beat the heat wave passing through. It was SO easy and a huge hit! 

Have you looked at the amount of added sugar in popsicles at the grocery store? It feels like we’re averaging 15g a pop! That’s why I feel great giving my kids these YUMMY electrolyte, no sugar added, easy, homemade popsicles.

Side note: we tried two methods - blending the watermelon and using watermelon chunks.  The blended version lasted frozen longer on the popsicle sticks but my kids preferred to see the watermelon chunks so it was a WIN-WIN!

Ingredients

  • 2 cups watermelon
  • 6 cups water
  • 1 watermelon LMNT packet (Get a free gift with purchase when you shop my link!)

Directions

  1. If you're looking to create two different types of popsicles like we did, blend 1 cup of watermelon with 3 cups of water and half a watermelon LMNT packet in a blender or by hand with a whisk. Fill half of the popsicle molds with this blended mix.
  2. Take the remaining cup of watermelon and chop it into large chunks.  Place the watermelon chunks evenly throughout the remaining 3 popsicle molds.  Separately, dissolve the second half of the watermelon LMNT packet into the remaining 3 cups of water.  Once dissolved, fill the remaining 3 popsicle molds that have watermelon chunks with this salty mixture. 
  3. Insert the popsicle sticks into the mold and freeze for 2 hours or until frozen.
