Hummus Trio

This Hummus Trio is a winning trifecta for any appetizer needs. Plain, Spinach and Beet Hummus give classic, sweet or earthy flavors with each bit. Every palette will be happy!

These can be whipped together quickly, as they all use the same base. I love this time-saving hack! A light topping of olives, hemp hearts or pistachios also allow you to play with textures. I serve this hummus trio alongside a veggie crudité platter or with some sort of grain free flax crackers. I like Mary’s Gone Crackers or Flackers from Thrive Market.

I’ve found that appetizers are often heavy hitters for three things we try to keep to a minimum in my home: 

  • Simple carbs (breads! sliders! crostini! chips and dip!) 
  • Fried foods aka highly processed and inflammatory vegetable and seed oils (fried jalapenos! crab rangoon! mozzarella sticks!) 
  • Sneaky added sugars (barbecue! teriyaki! bourbon meatballs! glazed smokies!)

Ingredients

  • 1-2 garlic cloves
  • 1 can garbanzo beans
  • 1-2 tbsp olive oil
  • Handful of spinach
  • 2-3 red beets
  • 1 tsp hemp hearts, for topping
  • A few olives, for topping
  • Handful of peeled, unsalted pistachios

Directions

  1. Drain 3/4 of garbanzo bean can, then place beans in a food processor. Blend with garlic. Add olive oil and blend until desired consistency. Add more olive oil for a creamier consistency.
  2. Remove 1/3 of hummus and place in a separate bowl or container for serving. Set aside. To serve, top with olives.
  3. With the remaining hummus, add spinach to food processor and blend until smooth. Remove 1/3 of hummus and place in a separate bowl or container for serving. Set aside. To serve, top with hemp hearts.
  4. Add beets gradually to the remaining hummus and process until you reach your desired consistency. Hummus should appear pink or reddish. Place beet hummus in bowl and set aside. To serve, top with pistachios.
  5. Serve with crudite or flax crackers – whatever you prefer.
