This Al Pastor Bowl is the right choice for when you want a slow cooker recipe with lots of flavor and not a lot of effort.

Allow your pork to roast slow and low for 6-8 hours during the day, and you'll be able to throw the rest together in under 10 minutes. Juicy pork with just the right amount of spice is thrown on a bed of sautéed kale with tangy goat cheese, sticky grilled pineapple, and creamy avocado. I love the tastes and textures of this bowl!

Ingredients

Braised Pork:

  • 2 lbs pork loin
  • 2 tbsp lemon juice
  • 3 tbsp coconut oil
  • 1 6oz - 8oz can organic tomato paste
  • 1 onion, chopped
  • 1 jalapeno pepper, seeded
  • 4 garlic cloves, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp thyme
  • ½ tsp cayenne pepper
  • ½ tsp paprika

Bowl:

  • 1 whole pineapple
  • 1/4 avocado, for topping
  • 2 cups kale, chopped and de-stemmed
  • 2 tbsp goat cheese (optional)
  • Cilantro
  • 1 tbsp Ghee or extra virgin olive oil

Directions

  1. Place all braised pork ingredients in a slow cooker and cook on low for 6-8 hours (depends on slow cooker). Tip: Pork tastes best when roasted slow and low.
  2. Over medium heat, sauté chopped kale in ghee or olive oil for 3-5 minutes.
  3. Remove the skin of the pineapple and slice into rings. Using a grill pan, preheat on medium-high and add cooking oil to the pan. Place each pineapple slice on the grill for 2 minutes on each side, or until grill marks appear.
  4. When your pork is ready, use a fork to shred and combine all of the ingredients in the slow cooker.
  5. Place kale in bowl, then add pork and garnish with pineapple, cilantro, goat cheese, and sliced avocado.
