My Favorite Kale Caesar Salad

This is a fun twist off your traditional Caesar salad! While it boasts homemade croutons and dressing (your choice of creamy or dairy free), the degree of difficulty is still so low.

I love that it’s unfussy enough for family weeknight dinners, but just special enough to serve while hosting friends over the weekend.

This Kale Caesar provides plenty of healthy fat as well as the fiber and greens. Add a protein on top like roasted chicken, seared salmon or a juicy burger and that rounds out your complete Fab Four meal. The simple addition of avocados and hemp hearts to the base of kale boosts the nutrient profile of this salad. Two tablespoons of hemp seeds contain six grams of protein and ten grams of healthy fats. Avocados are high in both fiber and healthy fat. And kale is rich in polyphenols and Vitamin C. Whether you choose the Dairy Free or the Creamy Caesar dressing, you’ll be getting an additional boost of healthy fats plus minerals and antioxidants from the lemon.

A final note on the homemade croutons…don’t let them intimidate you! They’re incredibly easy and so much better for your taste buds and your body than anything you’d buy in the store. No industrialized oils and fake flavoring. You have the option to go with a gluten free bread or traditionally fermented sourdough. True sourdough has only 200 ppm of gluten so it’s a good fermented option with minimal ingredients for gluten sensitive folks.

Ingredients

Salad:

  • 4 cups kale, chopped
  • 1/4 avocado
  • 2 tbsp hemp seeds

Dairy-Free Caesar Dressing:

  • 1/2 cup extra virgin olive oil
  • Juice 1 lemon
  • 2 tbsp nutritional yeast

Creamy Caesar Dressing: 

Homemade Croutons:

  • 1 cup cubed traditionally fermented sourdough bread
  • 1 tbsp olive oil or 1 tbsp Kerrygold Herbed butter

Directions

  1. Set your over to 350 degrees.
  2. Cube sourdough bread to your desired size. In a large bowl, drizzle the bread evenly with the oil or melt herbed butter and pour over of top. Toss to combine. Transfer to a parchment paper lined baking tray and spread into an even layer. Bake until crispy, tossing halfway through.
  3. Choose your desired dressing (dairy-free or creamy Caesar dressing) and add all the ingredients into a small bowl and whisk together.
  4. Finely chop your kale and pour the dressing over top. Massage the dressing into the kale to soften.
  5. Add sliced avocado, hemp seeds, and homemade croutons on top.
