Simple Brussel Sprout Salad

This Simple Brussels Sprouts Salad offers something sweet and salty with the perfect amount of crunch. It has a simple homemade dressing, and it pairs well with just about any protein!

I shave the Brussels sprouts in my Vitamix food processor. Then, just swap blades from shred to slide and process your remaining ingredients until it comes together completely.

Brussels sprouts and green apple provide fiber-rich greens, and Pecorino and olive oil add healthy fat. When you pair this salad with an animal protein like roasted chicken, a burger, simple seared salmon or something similar, it completes your Fab Four meal.

Ingredients

  • 2 cups Brussel sprouts
  • 1/2 green apple
  • 1 cup red grapes
  • 1/2 cup shredded raw Pecorino or Parmesan cheese (optional)

Dressing:

  • 1/4-1/2 cups red wine vinegar (or substitute champagne vinegar)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Directions

  1. Add dressing ingredients to food processor and blend until smooth.
  2. Add brussel sprouts, apple, grapes, and cheese to a food processor and pulse to combine. Once the ingredients are finely chopped, transfer to a separate mixing bowl and coat with the dressing. Toss to combine. Add salt and pepper to taste.
  3. Serve cold with your choice of protein!
