DIY Matcha Latte with Homemade Almond Milk

With three times the caffeine as normal steeped green tea, matcha is a natural energy booster and can combat chronic fatigue. It’s also a very good source of the amino acid L-theanine, which is important for a calm alertness and cognitive function. Matcha stimulates the mind without inducing drowsiness, unlike the caffeine crash that some experience after too much coffee.

  1. Cover and soak almonds in warm water with a pinch of salt, and let soak overnight.
  2. Drain and rinse the almonds and peel the skin off.
  3. Add four cups of water and 1 cup of almonds to a high speed blender and blend on high until smooth.
  4. Strain the almonds through a nut milk bag, fine cheesecloth, or a thin cloth and squeeze out the extra liquid into a jar.
  5. Add the homemade almond milk back into the blender. Add matcha powder and optional sweetener and blend.
  6. Serve over ice!
