Matcha Chia Pudding with Coconut Cream

Start your day with a matcha – a Matcha Chia Pudding! This chia pudding is loaded with healthy fats and fiber from coconut milk, chia seeds, and avocado to keep you full and energized for hours.

This make-ahead breakfast offers a grab and go option for something healthy to start your day with no morning prep work. You can even double the recipe and make-ahead your breakfasts for a couple of days!

I love that matcha offers a hit of caffeine, but because it contains the compound L-Theanine, it is calming to the brain. Energy without the jitters! It’s also a highly potent antioxidant and rich in polyphenols.

Ingredients

Matcha Chia Pudding:

Coconut Cream Topping:

  • 1 tbsp vanilla extract
  • 1/2 cup unsweetened coconut cream

Directions

  1. Add protein powder, coconut milk, matcha powder and avocado to a blender and blend on high.
  2. Add 1/4 cup of chia seeds to a resealable mason jar and pour the mixture over the chia seeds. Stir with a spoon to combine.
  3. Refrigerate and let sit overnight to thicken.
  4. For the coconut cream topping, blend 1/4-1/2 cup of coconut cream with 1 tbsp of vanilla extract in a high speed blender to create a fluffy consistency.
  5. To serve, mix up the chia pudding with a spoon and top with coconut cream.
