My Favorite Anti-Inflammatory Detox Salad to Feel your Best

This salad has everything you need to feel cleansed and energized. It’s my go-to for beating any bloat, puffiness, or inflammation throughout the body. With both creamy and crunchy textures, it’s packed with fresh herbs and greens and a little bit of tang from the dressing.

This salad works for a variety of reasons, but I’ll start with the dressing. Apple cider vinegar is beneficial for digestion and fighting yeast and pathogens in the digestive tract, which all reduce bloat. It can help stabilize blood sugar, which increases satiety and decreases cravings. Olive oil and turmeric are both incredibly anti-inflammatory as well. The healthy fats in the olive oil allow for greater absorption of nutrients in the greens/herbs eaten alongside it. Lemon juice can stimulate the production of bile and stomach acid, which are necessary for optimal digestion. A teaspoon of honey cuts the tang without adding a ton of sugar to the dish.

Absolutely packed with greens and herbs, this salad boasts an impressive micronutrient profile, and it has tons of antioxidants, which fight inflammation. Herbs like parsley, cilantro and dill are especially touted for their ability to cleanse the body of toxins.

And while we’re on the topic of detox, I want to point out that most “detoxes” you find on the market – pills, juice cleanses, extreme fasting without preparation – are harsh and hard on the body. You may lose a few pounds upfront, but you’ll be left crashing and craving (due to unbalanced blood sugar), low energy, brain fog, and fatigue. That’s just unsustainable. There’s a better way to achieve your health and weight goals. Blood sugar regulation and nourishment are the way.

To turn my Favorite Anti-Inflammatory Detox Salad into a full on Fab Four meal, add 4-6 ounces of clean protein such as shrimp or chicken to the top. The salad already has fat, fiber and greens, so with the addition of your clean protein, it completes the blood sugar-balancing Fab Four formula.

Ingredients

Dressing:

  • 2 tablespoons apple cider vinegar
  • ¼ cup olive oil
  • ½ teaspoon ground turmeric
  • Squeeze of fresh lemon juice
  • 1 teaspoon honey (optional)

Salad:

  • 4 cups mixed baby spinach and kale
  • 1 or 2 Persian cucumbers, sliced
  • 6 to 8 asparagus stalks, trimmed and cut into 1-inch pieces
  • ½ cup microgreens
  • 1 avocado, pitted, peeled, and cut into small cubes
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh dill

Directions

  1. In a salad bowl, whisk together the dressing ingredients.
  2. Add the chopped salad ingredients to the bowl and toss to coat with the dressing.
  3. Serve with 4oz of grilled protein of choice.
